QUICK + EASY VEGETARIAN TAGINE
If you've been keeping up with my Instagram, you know just how excited I am about my new Uno Casa Moroccan tagine pot. To be honest with you, I didn’t even know what a tagine pot was up until just a few months ago - and it seems like most people are with me on that, so let me do my best to try and explain:
Tagine pots are basically just regular cooking pots, except better! Traditional Moroccan tagine pots are made from clay, but Uno Casa stepped up the game by adding on a more durable, cast iron base... and I know how much we all love cast iron!
In addition, the traditional cone shaped lid allows you to cook your food for hours without having to worry about it drying out as the steam collects at the tip of the lid and recirculates the moisture throughout the pot - and the best part?! You can use this pot on the stovetop or in the oven, so it basically does it all...

Moroccan chickpea + carrot tagine—
makes about 4 servings
☼ 1 large onion, diced
☼ 4 cloves of garlic, minced
☼ 3 tbs olive oil
☼ 1 tsp salt
☼ 1 tsp ground ginger
☼ 3/4 tsp ground cinnamon
☼ 1/2 tsp black pepper
☼ 1/4 tsp cayenne
☼ 2 tbs parsley + more for garnish
☼ 5 large carrots, peeled and cut into sticks
☼ 1 c vegetable broth
☼ 2 tsp honey
☼ 2 c chickpeas, drained + rinsed
Begin by heating your oil in the base of your tagine pot over medium heat and sautee the onions and garlic until fragrant. Add in your spices, carrots, and vegetable broth and cover until the carrots are tender. Once your carrots are tender, add in your honey + chickpeas- cover and simmer for another 15 minutes, or until the sauce has become thick. Remove from the heat + serve plain, or over your favorite grains.
