Quick and Easy Twice Baked Potatoes

Servings 2  (adjust for your quantity amount)


Ingredients:

  • 1 medium to large russet potato

  • 1/2 tablespoon butter

  • salt and pepper to taste

  • Suggested 

  • Fillings and Toppings:

  • bacon bits

  • cheese

  • green onions 

  • sour cream 


Now let’s Cook!

  1. preheat oven to 350 F

  2. rinse and clean any debris and dirty from your potato

  3. poke holes in your potato using a fork 

  4. wrap potato in a damp paper towel

  5. place potato on microwave safe dish and microwave until fork and go through the potato with easy about  5-9 minutes depending on the size of the potato  

  6. remove potato from microwave and split in half

  7. scoop the inside flesh of the potato into a bowl out leave about a 1/4 inch on the skin (reserve skin on a baking sheet)

  8. add desired amount of filling to the bowl (make sure to save some for topping)  and mash together until mixed well

  9. spoon the potato mixture evenly into the reserved skins

  10. top with remaining filling and place in oven for 5-10 minutes or until cheese melts
