How to make your own homemade sweet potato Gnocchi! it’s completely vegan, gluten free and super easy!!


Homemade Gnocchi

Ingredients:

2 large sweet potatoes

1 cup of flour


Method:

Bake the sweet potatoes (or pumpkin) for 40 minutes or until soft.

Once completely soft, scrape out the inside flesh leaving all of the skin behind.

Place in a bowl and add one cup of flour and knead until a stretchy dough forms. Add slightly more flour if dough is too sticky.

Roll out the dough until flat and slice the dough vertically and horizontally into quarters. Mold the small squares into an oval gnocchi shape.

The gnocchi is now ready to be cooked. Add 4 cups warm water to a pot and wait for it to boil. Once boiled, place the gnocchi into the pot and cook for around 3-5 minutes or until the gnocchi has floated to the top.

Enjoy with your favorite pasta sauces and veggies 😋
