Creamy Cajun Chicken Alfredo

1 lb boneless skinless chicken breast or thighs
1/4 cup butter (I use unsalted)
1 cup heavy cream
2 cloves garlic (minced or crushed)
2 cups parmesan cheese
pasta of choice (I used linguine)
tablespoons cajun seasoning to taste
tablespoon garlic powder to taste
onion powder to taste
black pepper to taste
paprika to taste
1 tablespoon of canola or vegetable oil
Now Let's Cook!
Prepare pasta according to instructions on package and set aside
heat grill pan on medium heat and brush with oil then lightly coat chicken with oil and toss in spice mix of (cajun seasoning, garlic powder, onion powder, and black pepper) place chicken on grill pan and cook for 4-5 minutes on each side or until cooked through remove and set aside.
heat pan on medium/high heat add butter to melt then add garlic and cook until fragrant about 30 seconds to 1 minute, add heavy cream whisk together well and bring to boil for 2 minutes whisk cheese, cajun seasoning, and black pepper in to the pan. Stir until cheese is melted reduce heat to low add pasta and toss to cover completely. Chop chicken add half to the pan and toss with pasta then finish with topping the remaining chicken turn off heat and serve immediately.
