BANANA BREAD CUPCAKES

Ingredient Checklist

  • 1 cup white sugar 

  • ½ cup vegetable oil

  • 1 egg

  • 3-4 ripe bananas, mashed

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • FOR THE GLAZE

  • 2 cups powdered sugar

  • 2 tablespoons margarine or butter, softened SAVE

  • 1 teaspoon vanilla

  • 3 to 4 tablespoons milk or half-and-half 

  • Sprinkles of your choice

  • Step 1 - Preheat oven to 350 degrees . Grease your muffin tins with butter

  • Step 2 - Mix sugar, oil, and egg until creamy and light yellow in a bowl. Add bananas. Add flour, baking soda, and salt. Stir until completely smooth. Spoon the batter into the muffin tin,

  • Step 3 - Bake for 30 to 40 minutes, until toothpick poked in center muffin comes out clean.

  • Step 4 - Once cooled combine all the ingredients for the glaze - generously spread over the top and add the sprinkles
